Middle Eastern Baked Omelet |

This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ballard Estate in Euless, Texas in 1991. Ingredients:
1 bunch parsley finely chopped |
1/4 cup milk |
3 medium white onions diced |
1/4 cup flour |
6 eggs |
1 zucchini grated |
1 green pepper diced |
1/2 tablespoon salt |
1/2 teaspoon allspice |
1/4 teaspoon pepper |
1/2 teaspoon baking powder |
1/2 teaspoon vinegar |
1/2 cup shortening |
1 tomato diced |
1/4 cup bread crumbs |
Directions:
1. Mix all ingredients except bread crumbs. 2. Grease pan and flour with bread crumbs. 3. Pour mixture into pan then bake at 400 for 20 minutes. |
