The original recipe for this entree came from my grandmother, who baked it in the oven. Today, the fish, which has a pleasant lemon-and-herb flavor, cooks quickly in the microwave. My family has always raved about it.Gloria A. Warczak, Cedarburg, Wisconsin Ingredients:
1-1/2 pounds cod or haddock fillets |
1/2 cup white wine or chicken broth |
2 tablespoons lemon juice |
1 tablespoon grated lemon peel |
1 tablespoon minced chives |
1 tablespoon minced fresh parsley |
1/2 teaspoon dried tarragon |
pepper to taste |
Directions:
1. Place the fillets in an ungreased 11-in. x 7-in. microwave-safe dish. Cover and cook on high for 6 minutes; drain. Add wine or broth, lemon juice, lemon peel, chives, parsley, tarragon and pepper. 2. Cover and cook 4-5 minutes longer or until fish flakes easily with a fork. Let stand for 5 minutes before serving. Yield: 6 servings. |
