Taken from Fabulous Desserts. Cooking time is for 6-7 muffins. If you are making more or less at one time, adjust cooking time. Ingredients:
1 cup flour |
2/3 cup sugar |
1/4 cup cocoa |
2 teaspoons baking powder |
1/2 teaspoon salt |
1/2 cup milk |
1/4 cup oil |
1 egg |
1 cup raisins |
1/2 cup pecans, chopped (optional) |
Directions:
1. Combine flour, sugar, cocoa, baking powder and salt in a med bowl. 2. Add milk, oil, egg stir just until moistened. 3. Fold in raisins and nuts. 4. Fill 6-7 muffin papers 1/2 full. 5. Place cups in microwave-proof cupcake or muffin tin. 6. Microwave on high for 2-2 1/2 minutes. 7. Repeat process with remaining batter. |
