This is adapted from a WW recipe where the veggies were to be used as a stuffing. 0 PointsPlus. Ingredients:
2 carrots, small and sliced into thin strips |
1 zucchini, sliced into thin strips |
1 red bell pepper, sliced into this strips |
3 teaspoons spice for vegetables, mccormick vegetable supreme, to taste |
1/4-1/2 cup water |
Directions:
1. In a microwave safe low profile pan, layer carrots, zucchini and then bell pepper, sprinkling with spice at each layer. 2. Add water. 3. Cover. 4. Microwave on high 5-6 minutes. |
