Another easy bar cookie from the microwave Ingredients:
1 1/4 cups sugar, divided |
3 tbs. grated lemon zest, divided |
1 cup plus 1 tbs. flour, divided |
1/3 cup butter, softened |
2 eggs |
1/2 teas. baking powder |
1/4 teas. salt |
1/3 cup lemon juice |
powdered sugar, for dusting |
Directions:
1. In a medium bowl, combine 1/4 cup sugar,2 tbs. lemon zest and 1 cup flour 2. With 2 knives or a pastry cutter, cut in butter until mixture becomes crumbly 3. Press into an ungreased, 9-inch square microwave safe baking dish 4. Microwave crust on high until surface appears dry, about 3-4 minutes 5. In a medium mixing bowl, combine remaining 1 cup sugar and remaining 1 tbs. lemon zest 6. Beat in eggs, remaining 1 tbs. flour, baking powder and salt 7. Stir in lemon juice until batter is well mixed 8. Pour batter over crust 9. Microwave on medium power until surface is firm, about 8-10 minutes 10. Let cool, cut into bars, then dust tops with powdered sugar |
