Microwave Stuffed Acorn Squash |

Simple yet good and good for you Ingredients:
1 acorn squash |
1 mcintosh apple (small-medium) |
2 tablespoons brown sugar |
1/4 teaspoon ground cinnamon |
1 tablespoon low-fat margarine |
Directions:
1. Cook squash in microwave till soft yet firm about 4 minute. 2. Cool. 3. Cut in half and discard seeds. 4. Core apple; peel if desired. 5. Slice apple place in small bowl. 6. Microwave covered about 2 minutes,stirring every minute (should be a thick apple sauce). 7. Mix brown sugar, cinnamon and margarine into apple. 8. Fill squash halves with 1/2 of mixture in each. 9. Microwave covered 1-2 minutes. 10. Let rest 30 seconds and then serve. |
