Microwave Scottish Pudding |

Here is a recipe from our Scottish friends and it's simply wonderful - I really love it - Ingredients:
1/2 pint water |
4 ounces white sugar |
2 eggs, beaten |
1/2 lb plain flour |
1 tablespoon mixed spice |
1 tablespoon cinnamon |
1 teaspoon baking soda |
1/2 lb butter or 1/2 lb margarine |
1/2 lb sultana |
1/2 lb raisins (or if you prefer, 1 lb. desired filling) |
1 tablespoon treacle |
Directions:
1. Put into a large pan, water, spice, cinnamon, fruit, sugar, margarine, treacle. Bring to a boil then simmer for 1 minute only. Stir in flour, soda, and eggs. Mix very well. Put the mixture into a pudding basin lined with enough cling wrap to go over the sides. Do not cover the mixture. Microwave for 6-9 minutes. When cooked, keep in wrap, or remove the wrap if you do not want the skin to form on the dumpling. |
