This is so good and so easy. You can substitute 1 cup of white wine for 1 cup of chicken broth for extra flavor
Ingredients:
4 tbsp unsalted butter
1 small yellow onion, diced
6 1/2 cups chicken broth
2 cups arborio rice
1 cup parmesan cheese
1 tsp salt
1/2 tsp black pepper
Directions:
1. Place the butter and onion in a large glass bowl.
2. Microwave on high for 5 mins.
3. Add the wine and broth and microwave for 4 mins.
4. Stir in the rice and microwave on high for 30 mins.
5. Stir in the parmesan, salt and pepper and let stand at room temp. until the liquid is absorbed, about 5 mins.
6. If necessary, stir and microwave for 2 mins more.
