Microwave Reuben Meatloaf |

This came from Quick and Easy Microwave Dinner Recipes. I have not tried this, just posting for safe keeping. Ingredients:
2 slices rye bread or 2 slices whole grain bread, cubed |
1/2 cup water |
1 egg |
2 lbs ground beef |
3/4 cup sauerkraut, drained |
1/4 cup thousand island dressing (or combine mayonnaise, catsup ketchup , and chopped onion) |
1 cup shredded swiss cheese |
Directions:
1. Combine bread and water. Stir in meat, egg and salt and pepper to taste. Put half of beef mixture along bottom and sides of a loaf pan. Press sauerkraut over beef, then layer on salad dressing and cheese. Shape remaining beef into a large patty, and cover loaf, sealing sides. 2. Microwave on HIGH for 12-14 minutes or bake in oven on 350 for 45-60 minutes. Let loaf stand for 5-10 minutes. |
