A delicious way to get your five-a-day! I thought this was going to be boring and bland, and only made it as a way to get some veggies in... but I actually found myself craving more once it was gone! Use as a main dish or side dish. Add chicken or shrimp if you want to bulk it up some. Delicious either way! Ingredients:
1 cup yellow squash, sliced |
1 cup zucchini, sliced |
1 cup tomatoes, chopped |
1/4 cup green pepper, chopped |
1/2 cup vidalia onion, sliced |
1 cup eggplant, chopped |
1/2 tsp garlic powder |
1 clove garlic, minced |
1 black pepper to taste |
1 pinch of dried basil |
1 pinch of oregano |
1 clove garlic |
Directions:
1. Combine all ingredients in microwavable bowl, and cover. 2. Microwave for 8 minutes. 3. Transfer to serving plate and enjoy! |
