Offer this Italian cornmeal side dish in place of potatoes or rice. It's best served immediately out of the oven. Ingredients:
2 13 3/4-ounce cans low-salt chicken broth |
3/4 cup yellow cornmeal |
5 strips bacon, cooked, crumbled (optional) |
1/4 cup plus 2 tablespoons grated romano |
3 tablespoons butter |
1/2 teaspoon pepper |
Directions:
1. Whisk together broth and cornmeal in large bowl. Cook in microwave on High until thickened, about 15 minutes, whisking every 5 minutes to combine. Stir in bacon, Romano, butter and pepper and serve. |
