Easy, tasty meatloaf using the microwave to keep it moist. No hard crust or burnt sauce. It is a staple in our home. Ingredients:
1 1/2 lbs ground beef or 1 1/2 lbs ground turkey |
8 ounces tomato sauce |
1 egg, slightly beaten |
1 cup quick-cooking rolled oats |
1/4 cup minced onion |
1/2 teaspoon minced garlic |
1 teaspoon salt |
1/4 teaspoon pepper |
1/3 cup catsup |
1 teaspoon worcestershire sauce |
1 tablespoon brown sugar |
1 tablespoon brown sugar |
Directions:
1. Combine first 8 ingredients in a bowl and mix with hands until well mixed. 2. Pat into a 9 x 5 loaf pan. 3. Cook in microwave on full power 6 minutes. 4. While cooking for the first 6 minutes, combine sauce elements into small bowl and whisk until mixed. At the end of the first 6 minutes pour sauce over the loaf and continue cooking for an additional 5-7 minutes. (For a firmer loaf. decrease tomato sauce to 6 ounces). |
