Microwave Cream of Mushroom Soup for 2 |

Tater tot casserole may never be the same... Ingredients:
1 1/2 cups slice fresh mushrooms |
1/4 cup chopped onion |
2 tablespoons butter or 2 tablespoons margarine |
2 tablespoons all-purpose flour |
2 cups hot water |
2 teaspoons instant chicken bouillon granules |
1/2 cup shredded swiss cheese |
1/8 teaspoon white pepper |
1/2 cup half-and-half |
1 teaspoon white wine |
Directions:
1. In 2-quart casserole combine mushrooms, onion and butter. 2. Microwave at High 3 to 4 minutes, or until onion is tender, stirring after half the time to coast with butter. 3. Blend in flour. 4. Stir in water and bouillon granules. 5. Microwave at High 5 to 6 minutes, or until slightly thickened, stirring 2 or 3 times during cooking. 6. Blend in cheese, white pepper, half and half and wine. 7. Microwave at High 2 to 3 minutes, or until heated and cheese melts. |
