quick and easy Ingredients:
1 1/2 cups sugar |
4 tablespoons cornstarch |
1/2 cup cocoa |
1 dash salt |
3 large eggs (room temperature) |
2 1/4 cups milk |
1 tablespoon butter |
1 tablespoon vanilla |
1 pie crust |
1/4 cup sugar - for meringue |
Directions:
1. Mix dry ingredients: sugar, cocoa, salt, and cornstarch, together. 2. Separate egg whites out and set aside. 3. Beat egg yolks and add a little of the milk. 4. Add to dry ingredients. Add the remainaing milk. 5. Microwave for 2 minutes, then stir. Repeat 2 more times. After 6 minutes, reduce microwaving time to 30 seconds, sitrring after each until you've microwaved for a total of 8 minutes or until the filling is 'set.' 6. Pour into a pre-baked pie shell. 7. Meringue: Beat egg whites (at room temperature) on low until full. Increase speed to medium until firm (soft peaks form). Gradually at the sugar, just enough to mix. 8. Bake 350 degrees for 10-12 minutes, until Meringue is lightly browned. |
