Microwave Caramel Corn or Popcorn Balls |

Fun and easy caramel corn Ingredients:
1/3 cup butter (no substitutions) |
2/3 cup packed light brown sugar |
1/3 cup light corn syrup |
1/4 teaspoon baking soda |
1/2 teaspoon vanilla |
10 cups popped popcorn |
Directions:
1. In a 4 quart microwave safe bowl, microwave butter on high. 2. Stir in brown sugar & corn syrup. 3. Microwave on high for 1 - 3 minutes, stirring once, until mixture boils. 4. Microwave on high 3 minutes without stirring. 5. Stir in baking soda & vanilla. 6. Stir into popped popcorn, mixing well. 7. Microwave on 70 percent (medium) forn1 minute. 8. Remove and stir. 9. Microwave on medium 1 more. 10. Remove and stir to coat. 11. Remove and spread on jelly roll pan lined with nonstick foil or wax paper. 12. Frm into balls or cool and break apart. 13. Optional: drizzle with melted chocolate or add nuts. |
