I foudn this recipe yesterday and made it stright away. I am posting it so that I don't lose the recipe as it can be made last minute. I used the end of the challa, instead of brioche. Use whatever you have handy. I think next time I might pop it under te grill for that crispy topping you don't get in the microwave.
Ingredients:
1 egg
2 slices brioche bread, hallah, croissant, buttered
25 g caster sugar
150 ml milk
2 tablespoons cream or 2 tablespoons creme fraiche
1 teaspoon vanilla extract
1/2 teaspoon mixed spice (i omitted this)
25 g dried fruit
Directions:
1. Cut the bread into fingers and layer them in the bottom of a small dish. (About 600 ml capacity).
2. Add dried fruit.
3. Whisk together the egg, milk, cream, vanilla extract and cream.
4. Pour over the bread and let it sit for about 1 hour. If you don't have an hour it does not matter too much.
5. Micorwave on medium power for 4 - 5 minutes until it begins to set at the edges.
6. Let it stand for 5 minutes and then serve with cream or custard and a big grin.
