The combination of beef, lamb and pork can make your summer grilling an exotic event. This is what you smell at every Romanian outdoor market and is traditional street food. I used my food processor to finely chop the meats, but you can buy them ground. Read more . Garlic, dill, black pepper and paprika add a wonderful, yet subtle kick. Ingredients:
8 oz finely ground lamb |
8 oz finely ground pork |
8 oz finely ground beef |
3 cloves garlic -- finely minced |
1 1/2 teaspoon salt |
1/2 tablespoon dried dill or 2 tablespoons of fresh, finely chopped |
1 tablespoons baking soda |
1 teaspoon hot paprika |
1/2 teaspoon ground black pepper |
1 tablespoon olive oil |
Directions:
1. In a large bowl, mix all ingredients together with your hands, squeezing and kneading to combine thoroughly. 2. Pinch off a small piece, fry it and taste to adjust seasonings. 3. Form mixture into sausage-shaped rolls about the size of your index finder. Arrange on a lightly oiled platter or large plate, cover with plastic and refrigerate for 2 to 4 hours. 4. Build a hot fire, oil the grate and cook, turning with thongs, until browned and cooked through - 6 to 8 minutes. 5. Serve immediately, mustard optional. |
