Michaels Spicy Chipotle Sausage Stew |

I’m in the process of making this right now. I didn’t really have a plan before developing this recipe. I sort of just threw a lot of different ingredients into my crock pot and let it go! Initial tastings have proven this one to be a winner! Read more ! Ingredients:
1/4 cup olive oil |
8 sausages (i used 4 garlic chicken sausages and 4 turkey sausages, as my wife doesn’t eat pork — but use anything you like) |
1/2 cup coarsely chopped red pepper |
1/2 cup coarsely chopped green pepper |
1 29 oz. can tomato sauce |
1/2 large yellow onion — coarsely chopped |
5 plum tomatoes — coarsely chopped |
1 yellow squash or zucchini — coarsely chopped |
1 clove garlic — minced |
1 tbs. dried red pepper flakes |
3 chipotle peppers in adobo sauce — finely chopped |
2 tbs. paprika |
1 tsp. ground cumin |
1 tbs. sea salt |
1 tbs. ground pepper |
Directions:
1. * Cut sausages into 1/2 inch pieces. 2. * Add olive oil to a large preheated skillet. Add sausages. Allow to brown. 3. * Add sausages and reserve oil to crock pot. 4. * Add red pepper, green pepper, onion, squash, tomatoes, garlic, chipotles to crock pot. 5. * Add paprika, cumin, salt, pepper, dried red pepper flakes. 6. * Pour tomato sauce over mixture. 7. * Heat on LOW for 6 to 8 hours. (Or, on HIGH for 3 to 4 hours). |
