MEXICANA EGGS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Wadsworth Estate in Greenville, Texas in 1990. Ingredients:
5 eggs beaten |
2 tablespoons butter melted |
1/4 cup all purpose flour |
1/2 teaspoon baking powder |
8 ounces cream style cottage cheese |
2 cups shredded pepper jack cheese |
4 ounces canned diced green chilies drained |
Directions:
1. Combine first 4 ingredients in medium mixing bowl and beat well. 2. Stir in remaining ingredients and pour into a well greased pie plate. 3. Bake at 400 for 10 minutes then reduce heat to 315 and bake 20 minutes. 4. Cut into wedges and serve. |
