I got this recipe from the United Way, JC Penny Cookbook 1996. They are always a big hit at Christmas time. Baking time is per sheet - so multiply that by how many cookie sheets you need to use. Ingredients:
1 cup butter or 1 cup margarine |
1/2 cup sifted powdered sugar |
1 teaspoon vanilla |
2 cups all-purpose flour |
1/2 cup pecans, finely chopped |
powdered sugar |
Directions:
1. Cream butter, the 1/2 cup powdered sugar and vanilla. 2. Combine flour and pecans. 3. Stir into butter mixture. 4. Shape dough into 1 inch balls. place on ungreased baking sheet. 5. Bake in 325 degree oven for 20 to 25 minutes until lightly browned. 6. Roll warm cookies in powdered sugar; cool on wire rack. 7. Roll again in powdered sugar. 8. Sprinkle with additional chopped pecans if desired. |
