Ingredients:
1 can(s) black beans, drained & rinsed |
1 tablespoon(s) chili powder |
1 tablespoon(s) crushed garlic |
1-1/2 teaspoon(s) cumin |
1/2 large red onion, sliced |
1 large red or orange bell pepper, sliced |
lettuce leaves for wrapping |
1/4 cup(s) lime juice |
1/4 cup(s) olive oil |
1 teaspoon(s) pepper |
salsa, sour cream, cheese - optional |
salt, as needed |
1 tablespoon(s) worcestershire sauce |
1 yellow squash, cut into fajita-like strips |
1 zucchini, cut into fajita-like strips |
Directions:
1. Combine the lime juice, olive oil, garlic, Worcestershire and spices to make the marinade and then toss all your veggies in the dressing & let marinate for at least 15 minutes. 2. Saute veggies & marinade until they are done as you like - I prefer them pretty caramelized. Warm up the black beans you've drained & rinsed by whatever method you prefer & set aside. 3. Assemble your wraps. I make wraps out of iceberg lettuce to give a nice crunch. Add black beans and veggies and top with low-fat sour cream and or low-fat cheese and a nice salsa. |
