A modification of Greek Tszatziki with a Mexican touch of cilantro, chili powder and a little heat. Great as a cool side dish. I used Toni Gifford's Chili Powder. Ingredients:
3/4 cup cucumber, seeded and coarsely chopped |
2 green onions, chopped |
3 tablespoons cilantro, med. chopped |
1/2 cup sour cream |
2 teaspoons chili powder |
1/8 teaspoon sugar |
Directions:
1. Blot excess water from the chopped cucumbers. 2. Combine cucumbers, onions and cilantro in a medium bowl. 3. Fold in the sour cream. 4. Add the chili powder, sugar and mix gently. 5. Chill for at least an hour. 6. Garnish with a cilantro sprig or cucumber slice. 7. NOTE: Cooking time is chilling time. |
