Mexican Surprise (Low Carb)

This dish is really taco-type meat with toppings layered on and even the little kids love this! The actual number of carbs will of course be deterimined by what you put on top!
Ingredients:
2 lbs ground beef
1 tablespoon chili powder
1 teaspoon salt
1/2 teaspoon pepper
1 cup sour cream
8 ounces velveeta cheese, cubed
shredded lettuce
chopped tomato
shredded cheese
sour cream
taco sauce (we use la victoria red or green)
Directions:
1. Brown ground beef in large frying pan until no longer pink.
2. Season with chili powder, salt and pepper.
3. Stir in sour cream and simmer for 5 minutes.
4. Add velveeta and stir until melted.
5. Serve in a bowl with shredded lettuce, chopped tomatoes, shredded cheese, extra sour cream and Taco Sauce (if desired).
