Mexican Summer Side Salad |

Spruce it up with extra veggies and spices as desired. Ingredients:
3 -4 ears fresh corn (organic is important to avoid genetic engineering) |
1 tomato, chopped |
1 avocado, chopped |
1/2 red bell pepper, chopped |
1/2 green bell pepper, chopped |
1/2 cup fresh cilantro |
2 tablespoons olive oil |
2 tablespoons lemon juice |
1 pinch sea salt |
1 pinch cumin powder |
1 pinch chili powder |
Directions:
1. Shave the kernels off the corn cob with a sharp knife into a bowl and toss thoroughly with remaining ingredients. Refrigerate until serving. |
