Tilapia is a mild, sweet-tasting fish that lends itself to all kinds of flavors. It's a good substitute for flounder and orange roughy. Enjoy this Mexican-style tilapia dish with sweet corn and rice. Ingredients:
4 (5 ounce) tilapia fillets |
2 teaspoons ground cumin |
1 teaspoon fresh ground black pepper |
1 (14 1/2 ounce) can mexican tomatoes |
3/4 cup shredded reduced-fat monterey jack cheese |
Directions:
1. Preheat oven to 400 degrees. 2. Lay tilapia fillets in a baking dish. 3. Sprinkle cumin and black pepper over fish. 4. Add canned tomatoes, and sprinkle cheese on top. 5. Bake for 20-25 minutes. 6. Serve with rice, sweet corn and black beans. |
