Mexican Style Shepherd's Pie |

This is something I concocted off the top of my head.The subtle flavors of green chile mashed potatoes and corn, heaped on top of ground beef with taco seasonings. Still tweaking it, but it fills you up fast. Ingredients:
2 lbs ground beef |
1 large onion, chopped |
22 ounces kidney beans, bush's grillin' beans, texas ranchero style |
1 1/4 ounces taco seasoning |
1/4 cup salsa |
2 teaspoons salt |
2 teaspoons garlic powder |
2 lbs potatoes, mashed |
7 ounces canned diced green chilies |
1 cup cheddar cheese |
1 tablespoon margarine |
1/2 cup milk |
1 1/2 cups corn, frozen |
Directions:
1. Sweat the onion, then brown the beef. Drain. 2. Add the taco seasoning according to directions, salt, garlic, and salsa. Heat through then add the beans. 3. Boil potatoes, Mash then add the margarine, milk, chilies, and cheese. 4. Spray a 13x9 baking dish with cooking spray. Add the meat mixture, then the corn, and finally layer on the mashed potatoes. 5. Make at 350 for 20-25 minutes until golden brown. |
