Mexican Style Pulled Pork

Great for groups, easy to double.
Ingredients:
2 1/2 lbs pork loin roast
1 medium onion (sliced thin)
2 cups barbecue sauce
1/2 cup salsa
2 tablespoons chili powder
1 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon oregano
1/4 teaspoon pepper
1/8 ttsp red pepper
1/2 teaspoon salt
Directions:
1. Remove excess fat from pork. Place pork in crock-pot, arrange onion on top. Mix BBQ sauce, salsa, herbs & spices. Pour over pork.
2. Cover and cook on low 8 - 10 hours or until pork is very tender.
3. Remove pork and shred (pork should just fall apart). Put back in crock-pot and mix. Turn to low and keep warm as needed.
4. Serve with fresh tortillas or buns. Garnish as desired.
