Mexican Style Pulled Pork |

Great for groups, easy to double. Ingredients:
2 1/2 lbs pork loin roast |
1 medium onion (sliced thin) |
2 cups barbecue sauce |
1/2 cup salsa |
2 tablespoons chili powder |
1 teaspoon cumin |
1/2 teaspoon garlic powder |
1/2 teaspoon oregano |
1/4 teaspoon pepper |
1/8 ttsp red pepper |
1/2 teaspoon salt |
Directions:
1. Remove excess fat from pork. Place pork in crock-pot, arrange onion on top. Mix BBQ sauce, salsa, herbs & spices. Pour over pork. 2. Cover and cook on low 8 - 10 hours or until pork is very tender. 3. Remove pork and shred (pork should just fall apart). Put back in crock-pot and mix. Turn to low and keep warm as needed. 4. Serve with fresh tortillas or buns. Garnish as desired. |
