Mexican Style Beef and Beans |

I made this one night instead of regular chili-style beef and beans. It's good plain or in burritos. Ingredients:
2 lbs ground beef |
1 onion, chopped |
1 green bell pepper, chopped |
1 (15 ounce) can rotel or 15 ounces medium salsa |
1 (15 ounce) can pinto beans (drained) |
1 (15 ounce) can kidney beans (drained) |
1 tablespoon butter |
1 teaspoon cumin |
1/2 tablespoon chili powder |
1 teaspoon garlic powder (or minced garlic) |
salt and pepper |
sour cream |
shredded cheese |
Directions:
1. In a large pan, melt the butter and saute pepper and onion for about 8 min, until soft. 2. Add beef and brown. Drain fat. 3. Add remaining ingredients except sour cream and cheese. If the beef looks too dry, add a second portion of Rotel or salsa. Cook over medium heat for 10 minutes. 4. Sprinkle with shredded cheese and serve with a dollop of sour cream. 5. Note: You can also add corn or use whatever beans you like best. We often add extra salsa or tomatoes. |
