I change this every time I make it. Ingredients:
12 oz sweet corn, drained |
19 oz black beans, drained (or chick peas) |
1/2 cup red onion, chopped |
1/2 cup red pepper, choppped |
1/2 cup fresh coriander (cilantro), chopped |
1 cup fresh tomato, chopped |
3 tbsp lime juice (opt or salsa) |
2 3/4 cup rice, cooked |
Directions:
1. Combine all ingredients. Toss well, chill and then serve. |
