Vegetarian stuffed pepper, only rice & cheese... Ingredients:
1 green pepper |
1/4 cup brown rice |
3 tbsp salsa |
1/4 cup reduced fat mexican cheese (shredded) or 2% cheddar cheese (shredded) |
Directions:
1. Cut top off & gut green pepper 2. Cook rice as directed 3. When rice is done, stir in the salsa 4. Layer cheese, then rice/salsa, then cheese, then rice/salsa & finally cheese on top 5. Bake in oven 375 for 5-7 mins (until cheese is melted) |
