Super easy and quick mexican stir fry. Ingredients:
1/2 green pepper, diced |
1/2 small onion, diced |
1 cup cooked black beans |
1/2 cup canned diced tomato |
1/2 cup frozen corn |
1 tablespoon taco seasoning |
1 cup cooked brown rice |
hot sauce (optional) |
salt |
Directions:
1. Spray skillet with cooking spray or lightly coat with oil and saute green pepper and onion over medium heat until onion is translucent. 2. Add the rest of the ingredients and cook 3-5 minutes. Serve and top with cheese, avocado, olives, jalepenos, etc. |
