A delicious mexican side dish -no meat-no fat low in carbs -high in fiber and nutrients. Ingredients:
4 cups tomatoes (i use 2 cans rotel) |
1 cup corn |
1 jalapeno, diced |
1 cup kidney bean, drained |
1 onion, diced |
1/4 teaspoon cumin |
1/4 teaspoon chili flakes |
1/2 teaspoon salt |
1/4 teaspoon pepper |
2 tablespoons oil |
Directions:
1. In a large skillet-heat oil and saute fresh jalapeno with onion,cook till soft-add rest of ingredients and simmer 30 minute. |
