A recipe I created when the family wanted sheppards pie but did not have potatoes. Now we eat this quite often. Its a family favorite. Ingredients:
1 lb ground turkey or 1 lb ground beef |
1 (15 ounce) can diced tomatoes with mild green chilies |
1 small onion, chopped |
2 teaspoons cumin powder |
3 tablespoons chili powder |
2 garlic cloves, chopped |
1 cup water |
1 (10 ounce) package vigo yellow rice |
1 (16 ounce) package frozen corn |
2 cups shredded cheddar cheese |
2 teaspoons butter |
cooking spray |
Directions:
1. Preheat oven to 350 degrees. 2. Cook rice according to package directions. 3. Saute diced onions and diced garlic in butter in a frying pan until translucent add ground turkey and brown. 4. Add cumin, chili pwder,1 can tomatoes & mild chilies including liquid and 1 cup water stir well and cook until water is absorbed. 5. Spray a 13x9 baking dish with cooking spray layer ground turkey on bottom of dish then layer with frozen corn. 6. Add 1 cup of shredded cheese on top of corn. 7. Then add cooked yellow rice on top of cheese. 8. Top rice with remainder of cheese. 9. Cook in oven for 30-45 min or until cheese turns golden brown on top. Enjoy. |
