Easy and tasty Mexican rice. Ingredients:
2 c long-grain white rice |
3 tbs vegetable oil |
1 clove garlic,roughly chopped |
1/2 white onion,chopped |
4 plum tomatoes,chopped |
1 jalapeno pepper,halved |
kosher salt |
Directions:
1. Soak the rice in bowl of hot water ,about 5 mins. Drain,rinse and shake dry. 2. Heat oil in skillet over med-high heat. Add the rice and toast,stirring about 8 to 10 mins.. Meanwhile puree the garlic,onion and tomatoes in blender. Add to the rice and cook till absorbed,about 3 mins. 3. Add 3-1/2 c water,the jalapeno and a pinch of salt;cover and cook over medium heat till rice is tender,about 10 mins. 4. Remove the skillet from heat. Uncover and place a clean towel over the rice,then re-cover and let stand 15 mins. Fluff the rice with a fork;serve with the jalapeno,if desired. |
