Traditional style Mexican rice Ingredients:
1 cup long grain rice |
1 tablespoon vegetable oil |
1/2 onion, finely chopped |
1 chicken bouillon cube |
1/2 teaspoon cumin |
1 garlic clove |
1/2 bell pepper, chopped |
1 jalapeno, chopped (optional) |
1 tomato, chopped |
salt and pepper |
1/2 cup fresh cilantro, chopped |
Directions:
1. Brown rice in oil for three minutes. 2. Add chicken broth and bring to a boil. 3. Add onion, bell pepper, jalapeƱo, and tomato. 4. Add bullion cube, salt, pepper, cumin, cilantro and garlic. 5. Boil. 6. Cover and reduce heat to low. 7. Cook 20 minutes. |
