This dish is similar to Spanish rice but with a more Mexican flavor. Ingredients:
1 lb ground beef |
16 ounces salsa |
11 ounces mexicorn (whole kernel corn with red & green peppers) |
1 1/2 cups water |
1 teaspoon chili powder |
1 1/2 cups uncooked instant rice |
1 cup shredded monterey jack cheese |
Directions:
1. Brown ground beef in lg skillet, drain. 2. Stir in salsa, corn, water and chili powder, bring to a boil. 3. Stir in rice. Cover, remove from heat. Let stand 5-7 min or until liquid is absorbed. 4. Fluff mixture with fork, sprinkle with cheese. 5. Cover, let stand 2-3 min or until cheese is melted. |
