Adapted from Nubella recipe, using brown rice instead of white rice. Only difference is the higher fiber using the brown rice. Ingredients:
1 teaspoon olive oil |
1 cup brown rice |
1 onion, medium |
1 clove garlic |
1 carrot |
1/4 tsp cumin |
1/2 cup chopped tomatoes |
1 1/2 cups chicken broth |
1/2 tsp salt |
Directions:
1. Heat oil in heavy saucepan over medium heat. Stir in rice and cook about 1 minuet. Stir in onion and garlic and saute about 3 minutes, stirring frequently until onion is translucent. Stir in remaining ingredients. * Increase heat to high and bring to a boil. Reduce heat to low. Cover and simmer 20 minutes or until liquid has been absorbed and rice is tender. Let stand 5 minutes. Fluff rice and serve. 2. *at this point put into rice steamer and steam until rice is done; about 40 minutes. |
