Easy and delicious Ingredients:
1 medium sized onion |
1 (14 ounce) can diced tomatoes |
1 cup rice |
1 tablespoon cumin |
1 tablespoon garlic powder |
salt |
oil, to fry the rice |
Directions:
1. Heat oil in a nonstick pot (make sure you have a lid). 2. Cut onions in big chunks. 3. Add your onions and rice to the pan, salt the rice and cook until rice is browned. 4. In a separate med sized bowl add your tomatoes,2 1/2 cups of hot water and your seasonings stir to mix. 5. Add to the hot pan. 6. DO NOT STIR. 7. Let the rice boil about 10 to 15 minute. 8. Cover with lid and turn off the heat. 9. Let stand for about 45 minutes, then wa la you have delicious Mexican rice! |
