2 cups quinoa, cooked |
2 tomatoes, diced |
2 onions, diced |
2 bunches fresh cilantro, chopped |
1 cucumber, seeds removed and diced |
1/4 cup fresh lemon juice |
2 jalapenos, seeds removed and diced |
salt and pepper |
Directions:
1. Combine all ingredients in bowl and mix. You can adjust the vegetables to you liking. |
