A egg quiche with a Mexican flair Ingredients:
1 frozen pie crust, i use organic whole wheat |
5 large eggs |
1 cup half-and-half |
1 cup shredded monterey jack cheese |
1/2 cup shredded mexican blend cheese |
1 (4 ounce) can of chopped green chilies |
1/2 cup diced cooked ham |
1/2 teaspoon kosher salt |
1 pinch black pepper |
1 pinch of ancho chili pepper |
Directions:
1. preheat oven to 375 degrees. 2. in a bowl, add 5 eggs, half and half and mix well. 3. blend in green chiles, cheeses and ham, incorporate well. 4. add salt, black pepper and Ancho Chile pepper. 5. Stir well and pour into piecrust. 6. cover piecrust with foil and bake 40 minutes and take off foil and bake an additional 15 minutes til center is done. 7. serve individually with dollop of sour cream if you like and sprig of cilantro for presentation. |
