from Chef Jill from the centerchef's food studio for this delightful low fat pumpkin soup Ingredients:
2 cups chicken broth, canned is fine |
1 pound plain pumpkin puree ( canned ) |
2 tsp pumpkin pie spice |
1 cup non fat or low fat greek yoghurt |
2 tbs apple cider vinegar |
2 tbs honey |
salt and pepper to taste |
2 tbs pumpkin seeds toasted and sprinked with cumin for garnish |
Directions:
1. bring broth to a boil and whisk in pumpkin puree and spice 2. Let soup simmer to meld flavors about 10 minutres 3. Turn off heat and whisk in vinegar, honey and Greek Yoghurt 4. Season and garnish with toasted cumin flavored pumkin seeds |
