This is a great potato salad that I obtained from a Sunday School classmate a few years back. She is an incredible cook and entertainer. This is one she hands the recipe out for often. Enjoy Ingredients:
1 pound whole potatoes quartered |
1/4 cup chunky salsa |
2 teaspoons fresh lime juice |
1 tablespoon salad oil |
1/4 teaspoon salt |
1/8 teaspoon freshly ground black pepper |
1 large tomato chopped |
1/2 cup pitted black olives sliced |
1/4 cup green onion sliced |
1 tablespoon parsley snipped |
Directions:
1. Cook potatoes until tender then drain well. 2. Combine salsa, lime juice, oil, salt and pepper then heat through. 3. Add sauce to potatoes then stir in tomato, olives, onion and parsley and serve hot. |
