Mexican - Potato Chorizo and Tomato Pizza |

I hope that you will enjoy, this quick and easy to make dish . I mean, really, who doesn't like pizza and this one sounds very tasty. Ingredients:
8 flour tortillas, soft, taco size |
2 teaspoons olive oil |
2 cups monterey jack cheese, grated |
8 red potatoes, small, cooked, diced |
1 cup chorizo sausage, cooked, diced 1/4 inch (may substitute italian) |
1 tomato, diced 1/4 inch |
2 ounces green chilies, canned and chopped |
1/2 teaspoon salt (or to taste) |
Directions:
1. Lay a tortilla down on an oiled baking sheet. 2. Evenly sprinkle 1/4 cup of the cheese over the tortilla. 3. Top with another tortilla and evenly sprinkle 1/4 cup of the cheese over this tortilla. 4. Next, arrange chiles, sausage, potatoes and tomatoes ontop of the tortilla. 5. Drizzle with a little olive oil and season lightly with salt. 6. Repeat this process with the remaining ingredients. 7. Bake in 400 degree F oven until potatoes start to brown and tortillas are crispy, about 10 to 12 minutes. 8. Enjoy this delicious potato chorizo pizza Mexican recipe! |
