Mexican Pork & Black Beans |

Ingredients:
1 lb black beans, cooked |
1 lb boneless pork sirloin, cut in 1 inch cubes |
1 teaspoon chili powder |
1 teaspoon ground coriander |
2 teaspoons salt |
1 onion, chopped |
1 clove garlic, minced |
16 ounces stewed tomatoes, broken up |
2 cups water |
fresh ground black pepper |
fresh cilantro leaves |
Directions:
1. Put beans in crockpot. 2. Toss pork with chili powder, coriander and salt. 3. Lightly brown onion and garlic with pork in ungreased skillet. 4. Mix tomatoes into crockpot with their juice. 5. Add meat, pepper and 2 cups water. 6. Cover and cook 9 hours on low. 7. Ladle over rice and garnish with cilantro. |
