MEXICAN ORANGE CANDY This recipe came from an estate sale. I obtained it when I purchased the family collection from the Choker Estate in Garland, Texas in 1994. Ingredients:
3 cups granulated sugar |
1-1/2 cups scalded milk |
1 cup pecans |
granted rind of 2 oranges |
1/2 cup unsalted butter |
Directions:
1. Melt 1 cup sugar in large pan over medium heat while milk is scalding in another saucepan. 2. When sugar is melted and a golden brown color add hot milk all at once stirring constantly. 3. Add remaining sugar and keep stirring until dissolved. 4. Cook until it forms a hard ball in water or use a candy thermometer. 5. Just before it is done add grated orange rind, butter and nuts. 6. Remove from heat and beat until creamy. 7. Pour into a buttered 9 square pan to cool. 8. Cut into squares when cooled. |
