Tasty Mexican meatballs make a great appetizer. Ingredients:
3 corn taco shells |
1 lb lean ground beef or turkey |
1 egg |
2 tsp. diced green chilies |
1 tsp chili seasoning mix |
1 bottle (8oz) taco sauce |
1/4 c shredded cheddar cheese |
minced cilantro |
Directions:
1. Break taco shells into food processor and pulse several times to create about 1/2 c taco shell crumbs. Place in large mixing bowl and add ground beef,egg,chilies and seasoning mix. Mix thoroughly. 2. Form mixture into 30 (1 ) meatballs and drop into hot skillet. 3. Cook meatballs until they begin to brown. Carefully turn over and continue browning. Add taco sauce. Coat meatballs with sauce and simmer over low heat,uncovered 10 mins. 4. Sprinkle meatballs with cheese and garnish with cilantro. Serve with toothpicks. |
