Can add various other cheeses including lower fat. Try different seasonings such as cilantro or any of your favorite mexican seasonings. This came from Thinner Times. I have not tried this, just posting for safe keeping. Ingredients:
1 1/2 lbs lean ground beef |
1 ounce taco seasoning mix (1 package, taco bell, ortega, etc.) |
1 green onion, finely diced |
2 eggs |
1 garlic clove, minced (optional) |
8 ounces sharp cheddar cheese, cut into small cubes (1 block) |
Directions:
1. Preheat the oven to 425°F 2. Beat eggs and mix all ingredients except the cheese together. 3. Mold a Tablespoon of meat around a cube of cheese to form a small shaped meatball. Repeat with all meat. 4. Place on edged cookie sheet (sprayed with PAM) and bake at 425°F for 7 - 10 minutes or until meat is done and cheese has melted. |
