If your looking for a different kind of meatball, then this is it. I came across this recipe in a cookbook that I have had for years.
Ingredients:
14 ounces ground lean pork
1/2 cup grated zucchini
1/2 cup crushed tortilla chips
1/2 cup scallion, chopped
1/4 cup cilantro
1 egg
1 teaspoon minced garlic
1 teaspoon ground cumin
1 teaspoon dried oregano
10 ounces enchilada sauce
Directions:
1. Mix all ingredients together. Roll into 24 meatballs. Brown in a little oil in a large nonstick skillet. Add enchilada sauce. Cover, simmer 5 minutes or until meatballs are cooked.
