If your looking for a different kind of meatball, then this is it. I came across this recipe in a cookbook that I have had for years. Ingredients:
14 ounces ground lean pork |
1/2 cup grated zucchini |
1/2 cup crushed tortilla chips |
1/2 cup scallion, chopped |
1/4 cup cilantro |
1 egg |
1 teaspoon minced garlic |
1 teaspoon ground cumin |
1 teaspoon dried oregano |
10 ounces enchilada sauce |
Directions:
1. Mix all ingredients together. Roll into 24 meatballs. Brown in a little oil in a large nonstick skillet. Add enchilada sauce. Cover, simmer 5 minutes or until meatballs are cooked. |
