From a TOH pasta magazine. I like this recipe because it doesn't have sour cream in it like all the others do. Ingredients:
1 1/2 lbs bulk pork sausage |
1/2 cup chopped onion |
1 (16 ounce) can refried beans |
1/2 teaspoon chili powder |
1/2 teaspoon ground cumin |
1 (8 ounce) package manicotti, cooked and drained |
1 (15 ounce) can tomato sauce |
1 (4 ounce) can chopped green chilies (optional) |
2 cups cheddar cheese |
Directions:
1. In a skillet, cook sausage and onion until sausage is no longer pink and onion is tender; drain. Stir in beans, chili powder and cumin. Stuff into manicotti shells; place in a greased 9 x 13 x 2 inch baking dish. 2. Combine tomato sauce and chilies if desired; pour over manicotti. Sprinkle with cheese. Bake, uncovered, at 350 degrees for 45 minutes or until heated through. |
