This is absolutely delicoius and flavorful, the best one I've tried yet. I got this from somewhere and added some lower fat alternatives. Ingredients:
2 lbs ground turkey |
1 (10 ounce) can refried beans |
1 (10 ounce) can fat-free refried beans |
1 (10 ounce) can rotel |
1 (16 ounce) jar taco sauce |
1 (2 ounce) can black olives, sliced |
2 teaspoons minced fresh garlic cloves |
3 cups reduced-fat colby-monterey jack cheese |
1 yellow onion |
8 inches flour tortillas |
Directions:
1. preheat oven 350, brown turkey in skillet over medium heat for 5 mins, add onion and garlic sautee 5 more mins, add taco sauce, refried beans, olives, rotel simmer on low 15 minutes. 2. in a 3 quart casserole dish add thin layer of meat mixture, put 2 overlapping tortillas over meat mixture, add a layer of meat mixture, cheese, and tortillas until gone, leave the top for remaining meat mixture and sprinkle cheese, bake unconvered 20 mins or until cheese is bubbly. |
